Fukamushi style is generally steamed :90 seconds longer then traditional Sencha. The leaves are slightly more broken but that does not mean the quality is less - its from the longer steaming process. The taste is sweeter and more mild. We first tried this on a tea making trip to Shizoka and fell in love. It's become a regular on the tea menu.
