We’ve been looking for an Organic Gykuro for a very long time and didn’t find any that made the grade. There is lots of non-organic Gyukuro, but that isn’t our cup of tea in this instance. Instead, we found an Organic Kabusecha that is also shaded producing more L-Theanine and other-worldly flavor just like Gykuro. The process of this tea includes shading the leaves for roughly a week or so before harvest. This contributes to an interesting balance of flavor similar in flavor and appearance to Sencha and Gyukuro. Best of both worlds so to speak. The infusion is a light green color with a complex flavor and buttery mouthfeel. The lingering sweetness is due to the increased L-Theanine.

If you aren’t familiar with this type of Japanese Green tea, you may not realize that this tea is made using cooler water: 120˚-140˚ F (max). Our first experience with this was years ago in Shizuoka with a Japanese Tea Master showing us the right way to brew this tea (cooler) and then passing round chopstick and soy sauce for us to eat the leaves afterwards. Try it!
